I wanted to create a challenge to slow the game down and make exploration and questing the main focus. This is called the Warrior of the Horde Challenge only because I'm trying it with a new Mag'har Orc Warrior. I suppose you could call it a Vanilla Challenge also.
Limited flightpaths: - Only one main city in each old world zone (this excludes major faction cities)
- Only two main cities in each Burning Crusade or higher zone
Limited Hearthstone use: - Hearthstone can only be used once every 12 hours
Limited portal use: - Only to be used when there is no boat, zepplin (airship), or flightpath to get to the destination
Mount restrictions: - Apprentice Riding at level 60
- Journeyman Riding at level 70
- Expert Riding at level 80
Limited mount use: - Flying mounts are only to be used to reach quest or dungeon and raid areas that cannot be traveled to by a ground mount (and only to reach the area)
Gear restrictions: - Only rare (blue) quality quest rewards can be equipped
- Any gear quality found out in the world can be equipped
- Any gear made available through reputation can be equipped
- All dungeon and raid gear can be equipped
Limited map use: - Only the world map can be used (minimap hidden - MoveAnything addon)
- No quest objectives shown on the world map (ClassicQuestText addon)
Limited LFG and LFR use: - Can only use the LFG or LFR finder once every two hours
I know a lot of this is managing your own extended cooldowns and cannot be tracked in any way. So far, I'm having a really fun time leveling in Stonetalon Mountains. Not having access to a ground mount makes it so that you have time to think about the quest you picked up. And since there is no minimap, you're looking more into the distance for your quest objectives and areas. I've done old world zones so many times I know where all the quest areas are located- or so I thought. I've noticed that instead of constantly looking at my minimap and opening my main map, I'm looking at my surroundings and taking in more of the world. You actually need to pay attention to where you're going so you can get back. Not having the luxury of constant hearthstone use, makes it so the world feels more dangerous again. You go to the back of that cave, you have to get yourself back out. I tried to keep in mind higher zones when making this challenge. I might have to change things around a little if the mount restrictions don't allow you access to content.

Good luck!
most of these restriction are indeed intrackable, and will mostly only have impact on your played time. However, the fact that you allow yourself to wear blue gear means you won't able able to register on the wowochallenges website, or get flagged

I just found this post, haven't been here in a while but I've been also thinking about a new challenge. I think allowing all pieces of gear AND rare quality makes it far too easy, but maybe that's what you are aiming for. What I like about your challenge is the no-minimap approach. It's exactly what I have in mind as well. I also use advancedinterfaceoptions addon to disable the auto-tracking of new quests so that I won't automatically have new quests on my map. I enjoy having to look for the targets on my own instead of following my map. I still track quests, but only when I have them completed in order to find the questgiver again (which sometimes moves away from the location where you got the quest from him). What I'm still looking for, to make it even more immersive, is a way to hide the player-arrow on the worldmap. I had a macro which did that, but it doesn't work anymore. It had the effect that you didn't know for sure where on the map you are, so you had to look for landmarks in order to get hints. aweseome, keep it up!

Update on challenge character:
I've gotten to level 59 on my arms warrior, Zihruk. I've yet to do any dungeons, so my gear has been coming from blue quest gear, professions, reputation, or world found. I also added that he could only use 2H Axes. I still have some gear pieces from the starter Mag'har set.
It's been really fun. I recently got a Spyglass off the AH, and it's been really cool to trek up a hill and look around for where I need to be going for the quests.
I've yet to use my hearthstone either. The restriction on flightpaths is more challenging in certain zones. I chose Krom'gar Fortress in Stonetalon as my one flight point. That zone can take some traveling, especially when you're having to run through it to get to other zones.
I'm considering going for loremaster before moving onto Outland. If I do that, I think I'll save the mount until I get to BC.
As far as UI; using the Immersion UI is really nice. It hides the player & target frame, gives a compass, and reduces the alpha of the action bars. So I'm currently using: Immersion, Immersion UI, Classic Quest Text, and Auctionator. Since the changes to the API, I can't find a way to hide the player arrow on the main map. Still looking, but I think they removed that functionality.

Update: I locked my warrior's XP at level 60. I've decided to get Loremaster of Kalimdor and Eastern Kingdoms before moving to Outland. Still a far way off from these achievments, but I've been doing more exploring; going out of my way to check out random buildings or other things I see in the distance, or looking at the random items scattered about. The detail in the engineering hut in Ratchet is pretty good. And I've found quite a few NPCs just chillin at the top of mountains. I've also started reading any of the in-game books I come across. Fun side note: if you go to- I think it's Elder Rise in Thunder Bluff, there are a bunch of hanging scrolls that tell about the Tauren people's An'she and Mu'sha - their sun and moon deities. I have managed to replace all my starter Mag'har gear. Most of it's blue quest gear, but I've got a couple rep pieces and some found items. I was really excited the other day when I did the Waptor Twapping quest in the Barrens and it Warforged into a blue item. It was a big upgrade for me. Haven't gotten any trinkets yet, but I'm sure I'll come across them eventually. I tried the Fishing Tournament yesterday. I want to get the trinket that turns you into a fish. I managed to get 13 Tasty Fish before it ended. Which I considered kind of a win. I'm saving my first mount skill until Outland, so I was on foot running along the coast competing against players with flying mounts. So 13 wasn't too bad.
Still have yet to use my hearthstone. I also sort of changed the rules for the bind location, where it has to be for a major faction city. But that's easy to enforce when I don't use the thing, so...
I've not done any dungeons yet, either. I'll probably save them for last.
I just realized that the wording for the flightpath restrictions is a little confusing. Any faction capital (Orgrimmar, Thunder Bluff, Dalaran, etc.) and any port that has boat or zepplin access is allowed. Then, on top of that, you can have one flightpath per Vanilla zone, and two flightpaths per zone in Outland, Northrend, etc.
There's a bit of a gap in activity because I've been leveling a Zandalari Paladin.
