This is how I got my gnome rogue up to level 90.
Levels 50 to 60:
Early Winterspring has a repeatable quest to turn in beads. This can be done as many times as wanted. The xp scales down with level, but it's a good source of extra xp.
Overall, I try to keep the two level 55-60 zones untouched as I finish in Winterspring (skipping the enchanted cave and the huge named boss in the ice canyon) and Un'Goro Crater.

Level 60:
I cashed in the Plants Vs. Zombies intro chain, then quested in Zangarmarsh and Hell's Peninsula for the rest. Stealth let me raid the Broken camp for idols. Rogues are pretty good at kiting, so I kited sporebats and Bog Lords as part of quests. (Yep, I was hunting down and killing level 62 mobs as a 60 rogue with hit-and-run tactics.)
Level 61: Vanilla Level squish. Doing both level 55-60 zones and finding a few chests was enough to get to level 62.
Level 62-70: I did careful, careful questing in HP, Zangarmarsh, Tekkar Forrest, Nagrand, and a tiny bit of Blade's Edge. Also did a bit of grinding here and there.
If you want kind-of-slow but reasonably safe xp at levels 67-69, you can run around the lake NE of Shattrah and kill mobs, mostly basilisks. It's a long enough path that the mobs will respawn before you return. Earned about 15-20% of level 69 that way.

Level 70: Northrend. Rogues can quest in Northrend starting at level 68 if they're careful, but 70 makes things a bit safer.
Alliance Howling Fjord has an early quest in which mobs constantly attack allied guards. You can join in these fights. The kills count toward the quest AND you get partial xp for the kills, too. (Wouldn't recommend this if you don't have an aggro dump skill/racial.)
* I got the majority of my level 70 in Borean Tundra.
I was able to kill the bug things using the rogue toolset. Cheap Shot, Evasion and Kidney Shot do a very good job of making a single target ineffective, even if you have to wait 2 minutes between kills. When I needed to kill cultists for the plans, I was able to pull them one-by-one using Throw.
After the initial Borean Tundra quests, I skipped the Sourge haunted mine (too crowded) and helped the gnomes instead.
Several of Fizzcrank Airstrip quests are practically tailored for iron rogues. The Alarm-o-bots can be kited away from other bots and killed. (They'll sound an alarm with a short range. If no robots are in that range, the alarm does nothing.) The mechanognomes can be kited and killed once nearby Alarmobots are cleared. Finishing the Recursive quest (where you revert mechnognomes into gnomes) unlocks a quest to kill Gorlocs (who look vaguely like Murlocs, but are MUCH easier to isolate and kill.), which unlocks four consecutive level 71 quests that don't require killing, which a huge quadruple jackpot when you have Stealth.

Levels 71-77: LEVEL SQUISH PARTY IN OUTLAND!
* Your offense gets a huge boost versus BC mobs at level 71. Your defense gets a noticeably smaller boost. Level 70 BC mobs can still kill you, they just need numbers and/or time to do so. Don't get swarmed.
* One of my earlier rogues, Kvara, died at 74 to an Aimed Shot when trying to do the "Recommend Players [5]" quest to unlock the Netherwing dailies.
* In general, I'd recommend scouting ANY quest that has "Recommend Players [5]". Expect those quests to have AoE effects, stuns, mobs with a ton of health even after the squish, etc.
* The Ogrilla memory game can kill if you make enough errors.
* If you're flying over Skettis, the flying birds can dismount you. Fly accordingly. For the bombing quests, I stayed low, landed on the egg platforms, then bombed them. You can bomb the eggs from point-blank range AND the birds tend to leave you alone if you're very close to the platforms.

Levels 77-80: Northrend unsquished
Take this easy, there's some quests with potentially fatal twists. You can start doing Argent Tournament dailies at level 77, though you probably shouldn't do any daily quest outside of jousting or getting weapons from damp maidens until level 81.
Levels 81 to 86: WotLK IS SQUISHED, MOBS ARE GONNA DIE!
Tons of quests to do, and Icecrown has Argent Tournament Dailies and Dailies for the Knights of the Ebon Blade. (I was able to do Children's Week at level 85, but, really, there's enough quests and dailies to get to 86 even without a holiday.)

Levels 86-90: Squished Cata Chaos!
Again, tons of quests, tons of xp. There's a few deadly twists here and there, but overall, it's pretty safe.
Rogues can do most Tol Barad quests starting at level 86. At level 86, kill isolated mobs. I'd avoid the shark named Tank until much later (too much health, even with the squish), the Ettin named Problim (ditto) and the quests to kill the other faction in Tol Barad (those mobs are found in Combat Zones, where everyone is considered to be PVP flagged...)
Try to keep the end-of-expansion quests (Save Thrall, Unlock Firelands, Troll Raid Preview) intact until level 90. They're worth about 4,000 xp each at level 90, while most other Cata quests will be worth about 1k or less, and xp at level 90 is at a premium.
