That would probably fall under the same type of restriction as getting gold from another player. You'd sell the ench mats fo more gold than you'd sell the item being DEd.

Cause I was thinking to give to someone to DE then they give the matts back to put on the AH - cause Ench mats are free to post

I look at it this way:
the whole idea is to do so without external help. Since you would need help to DE something(since no proffs allowed beside first aid), this would fall under the "outside help" umbrella. At the same time, it also does not give any kind of combat advantage, so there's really no harm.
Ultimately this would be up to you. For me, it's outside help so I wouldn't do it. but that's how I'm choosing to challenge myself. if you choose to do so, I would not look down at you at all, since like I said it doesn't offer any combat advantages, which to me is the most important thing.
I would offer this advice. From my experience(and I have no actual numbers to back this up), the things you are looking to DE would probably make you more money than the mats you would get from DEing them. When I was still allowing myself use of the AH for this challenge, I was able to get at a minimum 5g apiece for every green I put on the AH, and some I would get significantly more from(I'm doing this on an RP server so some of the greens, especially robes and weapons, sell much higher because of transmogging). So you might want to check your AH to make sure DEing that green will actually make you more money in the long run.
