Being melee, some of these quests can be more questionable than for hunters or warlocks and I know these are the quests I wondered if I would be able to handle. I was Level 66 for these quests.
These you get at the Sha'tari Base Camp:
Digging Through the Bones - escort quest and not much to it, watch for scorpions and lost spirits that might pat around the party when escorting. Of course, when they reach their destination and find the drum they summon a crustbuster which they help bring down so it's doable.
Fumping - part 2 of the previous quest. You hit the drum and bring up the crustbuster. For some reason Exorcism didn't do any damage if I used that as an opener so I just opened with Judgment, Crusader Strike, Holy Wrath and then Exorcism (at this point the worm has probably gone underground and moved behind you) but they aren't that difficult to bring down. If you get the Sand Gnome instead of the worm, they hit harder so be careful there.
Big Bone Worm - last part. You kill Clefthoof and then use the drum to bring a really big worm. Same as for the Fumping quest as far as rotation. He does hit you with poison but it just affects your heals. If you don't get the worm when you hit the drum, you will get 2 Sand Gnomes. If one Gnome was bad then 2 are worse but they are doable just be careful and stun one for a bit while you are finishing off the first. Watch your health because it will drop quickly.

Dread Relic - In this one you loot a chest for the relic and then all these adds will show up. The adds have about 250 health each but there are a huge number of them. I landed on the chest, looted it and mounted up and flew off without having to fight anything. I would suggest this route.
Evil Draws Nigh - part 2 of Dread Relic. You are to kill Death-Speakers and Doomsayers to collect 20 skulls. I farmed these around Writhing Mound where you will use the skulls and Dread Relic to summon Teribus the Cursed (bone dragon). Clear the middle area last as that is where you will summon Teribus and they shouldn't respawn before you are done. Teribus has 11.8k health but because he is undead we can handle him pretty easily. One rotation and a couple of Exorcisms did him in.

An Improper Burial - (You get this one at the Refugee Caravan but the remainder in the chain is given you at the Sha'tari Base Camp) burn corpses in the area. Not much of a question as to whether it can be done it's just the first part of a chain.
A Hero is Needed - part 2. Kill Initiates and Doomsayers. Regular type fight. No issue.
The Fallen Exarch - Part 3. Destroy the contents of the Auchenai Coffin. Land a little bit off and pull the ones around the coffin one at a time. They are casters so getting them to come is a bit challenging but you only need to draw them out a little bit. I cleared all 4 of them to be safe but you might not need to. Click on the coffin and kill the ghost that appears. Easy for a pally.

Taken in the Night - Retrieve 5 wrapped warriors from Netherweb Ridge. Do this quest in conjunction with For the Fallen which you can get from Vindicatory Haylen who is just outside the Netherweb Ridge. You will probably get other things than the warriors so always be prepared to fight. You just have to watch for the spiders which you will need for the quest "For the Fallen".
For the Fallen - Do this while doing Taken in the Night. The spiders are not much of an issue but their poison ticks for a nice piece of health per second while they are also doing damage while hitting you - so watch your health.
Terokkarantula - part 2. The big red spider in the back of Netherweb Ridge. Looks intimidating with 11.8k health but not too bad with heals. The poison it throws on you reduces movement by 50% for 10 seconds so it's not much of an issue.

These are quests from Refugee Caravan:
Veil Shalas: Signal Fires - I just flew to each fire and clicked on them. Only had to fight a few Skettis at a couple of the firest but I believe at 2 of them I didn't have to fight at all.
The quests in the Tomb of Lights and the Shadow Tomb is doable but be very careful as some of those mobs respawn very quickly and I have heard that many an ironman has died in them. As a matter of fact, my last paladin died in the Shadow Tomb at level 66. Just be smart about it.
In the Allerian Stronghold you get a quest, Wanted: Bonelashers Dead! that gets you to kill something like 20 Bonelashers (which are buzzards in the Bone Wastes). Once you've done that she sends you after the tailfeather of Torgos, Torgos!. You will first need to kill his mate, Trachela (who can be found in the middle of the mound surrounded by Bonelashers), then go to Veil Rhaze and find Torgos' Bane and lay the carcass there to summon him down. He is very doable but watch for the wandering pats if you haven't cleared the area (even if you have some of those Arakkoa and Raven have a long pathing so be aware).
