Some of you may remember this thread I opened way back, when this forum was still fresh. Well, as it turns out, the stat squish changed quite a bit. So, it's time for a new one! And this time it's even in the right forum! xD
So, first things first. With a few exceptions, which I will name in this thread, white armor items can only be purchased up until level 45, weapons until level 41. These can be bought at random vendors which can be found at most (or all) of the capital cities. Some may also be found in questing zones, but if you want to be sure, go to a Capital. All of these items can be called "Sets" and can be bought at the following level ranges:
Armor Sets
Level: 0 (Can be purchased in most starting zones, these items have no requirement)
Level: 5
Level: 12
Level: 17
Level: 22
Level: 32
Level: 45 (First Plate items)
There are of course some exceptions, some items (especially shields and shoulders) can be bought earlier/later. Early on you also get items from quests or white drops, but that's only true for the starting zone and maybe a random vendor in one zone or another. Most of the time you want to upgrade your gear as soon as you reach one of the levels above. It's not that important anymore because of the stat squish, but every little thing helps, right?
As for Weapons, it's a bit more random, as you basically get a sort of level "range", were all weapons in this "set" are stronger, but you may only equip an axe at level 32 and a sword at 33 - with the sword being just a little bit stronger.
Weapons Sets
Level: 0 (same as the armor, can be purchased without needing a specific level)
Level: 2-4
Level: 9-11
Level: 14-16
Level: 19-21
Level: 29-31
Level: 39-41

And now, for the special armor items:
Cloaks
After the Classic zones, Blizzard stopped implementing grey and white cloaks. Before the squish there was a single cloak which was the best in the game. However, after the squish, there are now 5 Cloaks that give you 6 armor. These can be equipped as soon as level 42.
Cloth Armor
Saddly, except for the random gray drops, there is no other cloth item we can get. There is a white hat, but that one is associated with a dungeon quest on Old Hillsbrad.
Leather Armor
Tewah Chillmane in Borean Tundra is selling a level 65 "sets". Sadly, only Horde characters can buy from her. After that, there are only the gray drops.
Mail Armor
Worn Mag'hari Gauntlets
Mag'hari Chain Vest
These two items can be bought in various zones in Outland and Northrend. The earliest is most likely Zangarmarsh for alliance and Nagrand for Horde. You still need yu be level 70 in order to equip them. After that, again, only gray drops.
Plate Armor
Heavy Draenic Bracers
Aldor Heavy Belt
Heavy Draenic Breastplate
The plate equivalent to the mail equipment. Can be bought at the same vendors, but you also need level 70 to equip it. After that, again, only gray drops.
Shields
Layered Bone Shield
Brunnhildar Shield
The Bone Shild requires level 70 and can be bought from various vendors, the same as the other "special" items. The Brunnhildar shield can be bought from Warsmith Sigfinna in Storm Peaks. I am not completely sure, but I think you have to do a questline first in order to actually get access to her. Also, the shield requires level 75 and gives only 3 more armor. The last gray shield requires level 51, so the two I linked above are the best shields an Iron can get.

Weapons
Oh boy, quite a few nice pieces we get here.
Last Year's Mutton
This one can be bought at the Darkmoon Faire. With a requirement of level 50, it is actually the strongest weapon you can aquire for quite some time.
Level 60 Weapons
These can be bought from various vendors in Outland and Northrend. They fill pretty much all needed slots, with the exception of Daggers.
Wolvar Shortbow
This Bow can be bought from a Wolvar in Sholazar Basin. However, you have to befriend them and Dalaran probably offers better items anyway.
Itemlevel 75 Weapons
These are various weapons which can be found at various places. There are, however, some wands which may be interesting for casters. The "Forsaken" Weapons can be bought as soon as Howling Fjord on Horde Characters, Alliance characters can buy them in Icecrown from Initiate Claget. However, I am not sure if he can be accessed immediatly or if you have to do some prequests. The Tuskarr Spear is sold in the various Tuskarr villages found in Howling Fjord, Dragon Blight and Borean Tundra. All weapons require level 70 to equip.
Itemlevel 80 Weapons
These are all sold in Dalaran and also require level 70 to equip. They are stronger then the other weapons, but you have to get to Dalaran first.
Deepholme Two-Handers
These are all two-handed weapons which can be bought in Deepholme. They have itemlevel 83, which is a little bit lower then the following ones. I also think you actually have to quest quite a bit in Deepholme in order to get access to the vendor.
Brunnhildar Weapons
Warsmith Sigfinna also sells these. What's really special about them is that they have procs, dealing 5 additional damage per hit. It seems it was removed from the 1-handed weapons, but the 2-handers and the bow still have it. Might be worht looking into, especially since the weapons are now viable for a longer time because of the item Squish. Actually, these weapons are the strongest in the game until you reach level 90 and can equip the Draenor items.
Gas-Powered Stick
Looks like we get a little love in the new expansion! Come Warlords of Draenor, this item seems to be buyable from an NPC in the (Horde) Garrison. It's a 2-handed staff with an attackspeed of 1.00, it also has a whooping 52 DPS, which is nearly double the DPS of any other weapon currently in the game. Let's hope it will be released!
All other items are gray, but as said, because of the item squish the DPS is pretty low, so the white weapons are actually pretty good.
