Total cost for me was not worth it to do the JC quest. ~50G for 20 tin ore from AH, ~40 more copper ore, a small lustrous pearl from AH, 5 Shadowgem. The copper ore alone for this skill would've sold for 720g at local market price during DMF.

Return next month after farming enough to do it again, as applicable.
After doing JC, I couldn't do Engineering because I didn't have rough stone mats because I've been vendoring them. I should stop that.
Overall, some of these are cheaper to do than purcasing dungeon & bg drops to start a dmf monthly quest, and others are better off to sell materials with which to buy those dungeon & bg drops. Market values apply. I recommend Tailoring, Inscription, and Alchemy, but not JC, Engineering, or Smithing. Skinning and Leatherworking are pretty much no good, and Enchanting isn't worth it unless you chose to make green jewelery and cloth armor to disenchant instead of bandages with tailoring, or saved these up from previous months.
If you're not gathering further than Elwynn or Tirisfal, relearning Herbalism is nothing to do and doesn't affect either exp or loot. Furthermore, subsequent tiers of Herbalism do not require skill at all, but only appropriate levels.
This is great for 2nd-month pacifists who have gathered significant resources to consume, instead of sell. The cloth is plentiful and cheap to buy for Tailoring since FA was removed. Herb prices are depleted with scaling, but copper ore is still much higher valued.
It's just more fuss to get a little bit more exp once a month.
I find it funny that Faire Favors still counts First Aid, and now requires unlearning and learning something new instead of simply 2 primary + all secondary professions. Note that this toon hasn't started Archeology yet.
