I see, thanks for the answers!
I took a look at the statistics ingame, it's quite difficult to create a new challenge which is different than the ones we already have since we're limited in what can be tracked. Basically it seems to me that most of the rules I can come up with are untrackable (like starting with one equipment slot in classic and adding a new one each expansion).
It would be nice that some addon creators would work on addons which enable people to track specific achievements and statistics ingame. We have thousands of addons which add convenience to the game and I can't find many which do the opposite for players who enjoy challenges. I'm trying to get into addon creation but it looks overwhelming to me at the moment.

I'm trying to create my own challenge but I have a hard time trying to find a way to track my own rule set. I have no idea how to work with API yet.
1.) Is there maybe a website / addon which helps me filter the information from the statistic and/or achievement panel?
2.) Does this site accept new challenges? What is required in order to get a challenge accepted?

Is it possible to create a challenge for you? If so, what are the requirements I need to achieve?
I'd also love to create something for myself, so that I can check if I break / not break the rules of a challenge I'm trying to create. How can I learn to create such a flagging system myself? And is there a way to get a look at my statistics panel without having to log into my character ingame?

And since there is no minimap, you're looking more into the distance for your quest objectives and areas. I've done old world zones so many times I know where all the quest areas are located- or so I thought. I've noticed that instead of constantly looking at my minimap and opening my main map, I'm looking at my surroundings and taking in more of the world. You actually need to pay attention to where you're going so you can get back. Not having the luxury of constant hearthstone use, makes it so the world feels more dangerous again.
I just found this post, haven't been here in a while but I've been also thinking about a new challenge. I think allowing all pieces of gear AND rare quality makes it far too easy, but maybe that's what you are aiming for. What I like about your challenge is the no-minimap approach. It's exactly what I have in mind as well. I also use advancedinterfaceoptions addon to disable the auto-tracking of new quests so that I won't automatically have new quests on my map. I enjoy having to look for the targets on my own instead of following my map. I still track quests, but only when I have them completed in order to find the questgiver again (which sometimes moves away from the location where you got the quest from him). What I'm still looking for, to make it even more immersive, is a way to hide the player-arrow on the worldmap. I had a macro which did that, but it doesn't work anymore. It had the effect that you didn't know for sure where on the map you are, so you had to look for landmarks in order to get hints. aweseome, keep it up!

a question:
Is it possible to track equipped trinkets, rings,... or is it only possible to track equipped gear overall?

Just my perspective on green gear
I've leveled a rogue from 1 to 63 with a dice rule:
When I get a Questreward or any other green item (drop, crafting) I roll a D20 -) 1-15... I delete the item -) 16-17... I store the item until I enter a new zone -) 18-20... I'm allowed to equip it
I also do not wear any rings, trinkets, necklace or bracers. I destroy items of those types the moment I get them.
So basically I'm very limited in my items and most are very outdated. It's a challenge to fight two mobs at a time but one isn't a problem at all. Depending on the cooldowns I use, I lose from 10 to 50% health against a mob of my level.
I think a green gear challenge (at least until level 63) wouldn't be too much of a challenge; I might be wrong for other classes or levelranges though.

update
I tested the 1-from-8 rule and some others which all felt still too easy. It should be a challenge after all, not just a breeze through with some extra rules.
Considering this I though about how to limit gear without going full ironman, so I ended up with rolling a dice for my gear. I tested this from level 1 to 63 so far: I roll a D20 -) 1-15... delete the Questitem -) 16-17... store the item until you enter the next zone -) 18-20... you are allowed to equip it
I have been testing this on a Rogue. So far the balance is really fine. Pulling two enemies gets me into trouble, but Rogues have many tools to make sure I only have to fight one at a time. I have no idea how this challenge would look like with other classes.
Looking at other players questing next to me and breezing through the mobs with absolutely no effort makes me wonder how they can enjoy leveling like that. I need that aspect of danger but I also love the thrill of getting new gear.
_____________________________________________________
I have another character (Dwarf Paladin) who runs this challenge with another twist: Ironman white/grey gear with the exception of items I can't see on the character: I'm allowed to equip rings, trinkets and a necklace of green/blue quality. He's only level 21 but it's already more fun that ironman or normal questing to me. I'm a jewelcrafter which helps getting those green rings, trinkets, necklace a bit, especially in the beginning.

yesterday the PTR got patched to a "release candidate", so I guess 7.3.5 arrives very soon.

When you have finished with all the rules, will you be sending Phone book sized manuals through the post? Well I'm actually trying to make it simpler, at the moment it's not that complicated if you've tried it. there is a lot of iteration going on though, hence the plenty communication. Some things don't turn out to be fun when testing happens, so I try to change those. I'm always open for suggestions

For quest items, the maximum you could equip at once would be 8 (8 possible seen on character slots), but maybe limit it to a max of 5 or 3, so that there would still need to be a trade-off when choosing gear. For the BoEs, you could roll to see if you can equip immediately, or if not immediately, then it gets grouped into the quest items at the end of the zone. ...or 9 if you don't use 2handers. I agree, it would be a tougher choice if you had to choose which items you keep and which you delete. The last time I stood before that choice the choice was easy though, since I had about 9 items and some were clearly better than the others. Mostly those which I got at a later point in time. What if I'd only allow one specific item level only once (or twice)? I would have a much harder choice now, since some items are of the same itemlevel. example: your items... ilvl 100 A ilvl 99 B ilvl 101 C ilvl 100 D ilvl 103 E ilvl 100 F A or D or F Maybe I could come up with a better idea. I like your first BoE idea.

update on the "Outdated Challenge Rule" testrun / possible changes:
It doesn't feel too challenging yet (My Paladin Dwarf is only level 22 and has leveled Dun Morogh - Loch Modan - a few quests in the Wetlands) but that's normal considering the low level and quests haven't dropped rings/trinkets/necklaces yet.
I noticed something nice though: -) Just before I enter the next zone, I put on all (for the moment no limitations) of the questgear I got in the previous zone. I haven't had the "clownlook" yet, pieces go well together. -) BoE drops, which I equipped the moment I got them, didn't look different so far. This might have been luck though.
I realize that you are quite powerful when you enter the next zone, since you have the best questgear on you for the moment... but since you can't equip any new quest pieces until you leave the zone, it becomes harder gradually with each levelup.
Some things I have to think about: -) How will this look like in expansion content after level 60. Will it feel challenging enough? (I think it will, considering 5 slots stay empty) -) How do mobs scale? Do they scale based on my itemlevel?? (which would be bad) -) Do I limit the pieces of questitem I'm allowed to equip? (e.g. only equip 5 pieces and destroy the rest) -) Will I add a random effect (dice roll) to integrate that limitation, or will I go with specific numbers? -) I like the rule for blue items: Joker --> equip 1 piece from your bag now, but... -) ... I'm not too sure what to do with BoE drops. Equip them instantly? Roll dice to see if they are broken, may be stored or equipped instantly?
I also did start crafting in this run. Mining and Weaponsmith. After I finished Loch Modan I flew back to Ironforge and crafted tons of gear, I couldn't catch up with my current questgear though. Crafting really needs dedication in this game, lol.

I thought of another change which would make the challenge easier to understand and harder to make mistakes
copy from another post:
possible change:
1 from 8 rule --> Outdated Challenge Rule:
-) you collect all the green questitems in your bag
-) when you've completed a zone -->
-) --> you choose what you want to equip...
-) ...and sell the rest
in short:
You quest through a zone in gear from the previous zone
You are still allowed to equip any green BoE drop when you loot it. I think that blue items are too powerful though... they might get a new purpose:
-) blue BoE / questitem = Joker
-) you are allowed to equip 1 green quest item in your inventory NOW (a quest item from the current zone)
The other rules still stand. You are only allowed to equip gear you can see on your character (no rings, amulets, necklace)
This is all for Patch 7.3.5, it would be still too easy for live.

or something much simpler, which increases difficulty as well:
Outdated Challenge:
-) you collect all the green questitems in your bag -) when you've completed a zone --> -) --> you choose what you want to equip... -) ...and sell the rest
in short: you quest through a zone in gear from the previous zone
(I haven't thought what to do with the blues yet)
Edit Hardcore edition: -) Choose 6 green and 1 blue item, delete the rest

DND Dice game when looting & getting questitems:
Just a variant of the 1 from 8 rule (Soulsearcher Challenge)
The standard 1 from 8 rule (choose 1 green item from 8 in your bag; destroy the rest)
NEW: BoEs and Questitems count towards 1 from 8 now Blue Item (quest & BoE) = Joker: choose 1 of your green items and equip it
each time you loot a green item or get green quest loot, you roll a d6 dice 1. critical fail: the item + ANOTHER green item in your bag gets destroyed (the last attack damaged your belongings) 2. fail: the item is too damaged – destroy it
3. it’s in a bad shape, store it only when you have < 5 greens in your bag 4. it’s ok but it needs to be evalued… store it in your bag 5. it's ok but it needs to be evalued… store it in your bag 6. It’s fine, you may equip it now
Once you have 8 greens, choose 1 and destroy the other 7. Choose wisely.
Why? Because it limits the amount of items you equip on your character --> the game gets more challenging
